I tend to use the dried quick action yeast, I have heard that fresh yeast is not as good in a bread maker but I don't know why??, anyway fresh yeast would go off too quick for me. I always use bread improvers and i must admit I always get them from Kitchen Foods!! they do make a big difference, although some don't agree with adding things like that, I like good bread so I'll stick with them!

Like bakerboy I always use dried yeast and have done for many years in bread makers 3 in total, when the last one stopped working I started to use my old Kenwood never had a failure but since I've started to use Kitchen Foods bread improver the texture and quality of both bread / rolls and buns has been better than I could have hoped for.

I buy fresh yeast, break it up into 25g portions, and freeze what I don't need. Not had a problem so far. |

I like use dry yeast in soft preparations, bread, pizza, and sometimes fresh in heavy, panettone, brioche, or where contain a lot fat and fruit.
